Recipe Standardization

Recipe standardization is my jam! I have extensive experience standardizing recipes for various organizations including the USDA, state agencies, non-profits and manufacturers. Since my experience entails working directly with the USDA, my methodology for standardizing recipes mirrors their processes and meets their meal pattern regulatory requirements.  I am experienced with facilitating kid tested recipes that can include taste tests for CACFP and/or school age children at your request.

Menu Development & Compliance

I served at the state level as a menu reviewer for over 5 years. This crucial experience provided a great foundation for truly understanding the critical elements of the USDA 2010 Health-Hunger Free Kids Act meal patterns including: the Summer Food Program (SFP), the Child and Adult Food Program (CACFP), the School Breakfast Program (SBP), and the National School Lunch Program (NSLP). In addition, I am proficient at developing menus and recipes for special diets and smart snack compliant ala carte items.
