I have been working with Chef Brenda Wattles over the last two years. I am the Kitchen Manager here at Bishop Kelly High School which is a small private Catholic high school. When I took this position two years ago, I did not have a background in child nutrition. Therefore, I consulted with Chef Brenda to learn how to build menus and develop standardized recipes to meet the USDA meal pattern and nutrient requirements. In addition, Chef Brenda assisted me with procuring the correct amount of food for this year’s menu. I am happy to announce that we just finished the menu portion of our Administrative Review and we received 100% on our menus and standardized recipes. I highly recommend Chef Brenda when it comes to developing programs for menu development, recipe standardization, procurement, and forecasting for inventory management.
